After 1st Try

Well, I pulled my 1st try out today after a little over 37 days, It looked great & I tried a small slice just to see how it was & it tasted wonderful. I may back off on the time on the next one because the first couple of inches on each end were like jerky. But, what the hell, if I have to sacrifice that amount to get the results I want - so be it.

that why I was wondering if there was an issue of cutting off the a few steaks during the dry ageing from one side the a week later cut 2 steaks from the other side
